setting line-out gain

Hello everyone,

I'm getting ready to install my system tomorrow and I currently am using a line-out converter but idr how I adjusted it the first time I think I just put it at 75%, is there a proper way to set it? And also I know how to set gains on a amp using a dmm. Is this still the best way short of an o-scope?
