Sounds like you have a handle on the electrical upgrades.
Are you leaning towards a single amp because of the amount of space two will take up? I agree it's nice to have fewer "boxes" to have to find room for. Just remember, a single amp that is capable of that much power will be physically quite large, which may be harder to mount than two smaller amps.
But if you have room for a single larger amp, and can find one that fits your requirements and budget, there's no reason not to go with it.
