how far should i turn it down?
sorry for the questions but this is all brand new to me

Use a volteter set to ac voltage on the speaker outputs without the speaker hooker up and use this formula
Volts(ac)=√(watt×ohm)
20(VAc)=√(400×1)
Set the amp to 20v ac on the amps output. Adjust the gain until it's at 20v ±1v

so for my car it would be 12v+_1v because i have a 12 volt battery?

No you would put the multi meter leads into the amps speaker terminals and set the gain knob to 20v AC not DC

This has nothing to do with the cars charging voltage.

Yes
ok so then that will turn the amp down so that i can use it with the sub
That will set the output to 400w any any extra eq will just eat into the headroom which is fine. The sub should take slightly more than RMS power without issue. Then later you can upgrade to a larger sub if wanted and still have power to spare

would you recommend this over the d4s jp8?
I would recommend this over the DFS JP8 for the money, or spend $10 more than the DFS JP8 and grabb a 1500.1

For the sub you want to run.. The 700.1 will be more than enough power and enough Head room for that sub. For the Price? And the sub you are wanting to run? Yes.. I would choose this amp
