Well I'll try to answer some of your questions.
First I would not recommend running your DVC sub on one voice coil. I've seen a manufacturer here or there that says you can do it but its not really recommended. Of course you can always run 1 amp to each voice coil if you so desire but you should always have both VC's hooked up.
As far as the difference between dual 2ohm and dual 4ohm or dual #ohm. This provides you with a variety of wiring options so you can get the most power from you amplifier(s). You can benefit from DVC subs even by choosing a single DVC sub that, when wired properly, will match your amps most powerful ohm rating. DVC's really help when you are running multiple subs because of the increased flexibility makes it easier to match subs to your amps.
If your sub was a dual 2ohm then I'd say bridge away to your heart's content. After looking at your amp though, I would personally hook up each VC to a channel on your amp because your amp puts out 125wx2 @4ohms, only 190wx2 @ 2ohms, and 380wx1@4ohm (bridged). So if you hooked up each voice coil to the amp on its own. You'd get 125w per voice coil for a total output of 250w, which should produce some volume difference over the 190w that you seem to be getting now. What sub model do you have btw? Also thats one small amp for such a powerful sub.
