I have two Alpine R2-W12D4, and a Stinger Monoblock amp that does:
2000Watt @ 1Ohm
1500Watt @ 2Ohm
800Watt @ 4Ohm

My subs are rated at 750Watts RMS / 2250Watts Peak

if I wire them like this picture shows:

Does this mean each sub will recieve 1500watts RMS or 800?

Also it will be in a sealed enclosure, is 1500watts too dangerous to run? Or will it be ok since its a sealed box?
If so does this mean its drawing 3000watts total from the car or 1500watts split parallel?
 
You are using the wrong wiring diagram. You have a mono block amplifier. It is only 1 channel, not 2. Many mono amplifiers have 2 sets of speaker outputs to make it easier to connect multiple speakers to it. But it is only a single channel.
Your wiring options are either 4 ohm mono or 1 ohm mono. I would recommend 1 ohm mono, that way each speaker would get 1000 watts ( half of the 2000 watt rating ) if you are worried about overpowering the speakers, lower the amp gain.

ok so can you explain how I would wire it to 1ohm for 1000watts each.

Also isn’t the bass not as clean, at 1ohm?
 
The only way the impedance would change the sound is if the amplifier wasn’t meant to be used at that load. So, no 1 ohm mono shouldn’t change the sound with your amplifier.

And, it's not a constant 1,000 watts. It's 1,000 watts max.
Having more power on tap than the driver is rated for is much better than too little.

You'll hear if you're pushing the driver with too much power, as opposed to having your amp clip and fry the voice coil/s instantly with a nice DC slam.
 
So what do I do with the other positive and negative terminals that are left empty, I thought this is not good to do
This is a mono amp, so the terminals are just connected in the amp case to each other.
You could wire it up so you are using all terminals, but the diagram shared does the same thing with less wire.

What would I wire up, just the one side positive to the other negative for both

OK. Just wanted to make sure it was true mono and not stereo that could be bridge to mono.
I'd almost bet the matching terminals (+ and -) are a solid chunk of metal. Connecting to either positive or either negative would be identical as far as the wiring scheme recommended above.

So yes, follow the diagram exactly as above and you will present that amp with a 1 Ohm load, which should give you up to 2,000 watts (depending on the measurement standard they used to get that number, and if it's a legit number).
