Computer building, I am

The reason I suggest using ryzen Master is because the temp probe layouts are different than most cpus in these ryzen ones.

"A new version of Ryzen Master now includes a different temperature readout algorithm that is meant to better represent the “overall” temperature of the die rather than the absolute maximum a sensor reports. AMD says this is a better representation of the temperature of the CPU. Besides averaging across different sensors, it also averages readouts over a small time-window. In my testing the most affected scenarios are idle and low-load scenarios and the new temperature behaviour isn’t nearly as erratic and spiky."

This! That's gotta be it. GREAT find

Going back to auto mode curve, it's about the same temp as the previous paste on the CPU, but the whole motherboard is actually quite a bit cooler. Remember I have 4 different temperature sensors on this board

Auto is the way to go, even if it idles a little higher. This allows your motherboard to read cpu temps in real time and adjust fans accordingly. More accurate control than a preset fan curve.

I may eventually get a 5950x, because of my designing.
You in no way shape or form need a 5950x to do what you do lol. If you want overkill get a 5900, for half the price of that 5950x, and still 4x more processor than you need. 5900x is easily capable of multiple simultaneous 8k video editing. 5950x puts many threadrippers to shame, and is honestly capable of running high in centralized computer system master servers.
