Will i be happy with an 8" sub?

I'd do a ported single 8 for now....with some good power on it.Do a trial run with it...a few weeks or so, see how you like it. Because if you want more, there's always that option.

 
You don't really need a big box for a 10" sub. I'd try to make things work with a 10" but that's me. I currently have a 10 and love it more than my old 12"s that I used to have.

It's small , fits and sound alike a beast!!!! Yes we have different subs brands but I think a box of this would still work well with your sub. Make it out of mdf if you don't want to spend on wood
