Depending on the amps they probably won't like being bridged to 2 ohms. If you plan on wiring them to 8 ohms, you may as well wire both of them to one amp @ 4 ohms and call it good.
Assuming that the amps can handle the load, there's nothing "wrong" with using 2 amps on 2 subs, but you need to take care to match the gains to get the best performance out of the setup. If you can partition the box into 2 chambers that would be better.
