leave everything on the ipod and itunes, plug in ipod, click on ipod on left, go to bottom and check manually manage music, click ok when asks if you are sure. Now it will never add or delete songs from the ipod on it's own, you must drag/delete yourself. You're welcome

That is the way to do it.

What you will find out though is that you cannot create new playlists if there is no library. For some reason you have to have access to the library to move things around on the ipod. I have my library on a separate hard drive and if it's not plugged in, I can't move songs, even though they are listed as in the libraryThere is a way to create them on the ipod, but it's slow and cumbersome.

^^^Which is why I like Anapod Explorer. It basically lets you make playlists on the iPod using an interface that looks exactly like and interfaces with Windows Explorer. Drag and drop to and from the iPod and within the iPod as well.
