Plywood cause it is easy to work with and if you have ever been in a older muscle car you would know that they have a thick foam dash pad over the speaker area so using plywood is just fine.

HU speaker outputs are identical between channels. There's no risk hooking a speaker between them. I think that's how center channel OEM setups are done. I agree that two 5.25's would be a way better idea though. And if the OP is ok with taking a jig saw to the rear deck it wouldn't take much to fit them.
