What size sub could I install in a wheel well

Wheel well is pretty expensive to maximize space. Figure a good hundred and a half in fiberglass plus the aggravation of working with fiberglass. More simply would be to create a wood box that fit down in there and just flush it off with the top side (which should be easy to measure).

Otherwise, get some foam peanuts and pour them into the well, then take a small cardboard box (of a known volume) and measure out the peanuts to get a rough idea of how many cubic feet you have to work with.

It is likely that single 10 or single 12" woofer would be the thing. I've seen some great examples of this for a stealth build and you can certainly get great sound out of most modern 10" woofers on 500-600W or less.
