What is the phase switch on an amp?

I don't know what amp you have but SKA is correct. It is used to switch the output by 180 degrees for tuning purposes.

 
Try it in both settings and see which sounds better. It's a subtle difference that you can't place, but you'll know when it's right. Has the same effect as swapping the pos and neg wires on the subs at the amp.
Some phase dials can be turned like half way which would be like 90.. what effect does that have?

pretend the blue wave is 'normal', then the red wave is when you adjust the knob to 180 and 90 respectively..

Anything other than 0 and 180 must have frequency associated with it to mean anything. Basically is serves as an analog time delay at that point.
How so? I'm sure you're right I just dont understand. A soundwave is a wave nomatter wahat frequency correct? It's frequency (spacing between segments) is the only thing that changes right? So why would a 90deg. phase shift at 2khz be different than a 90deg. phase shift at 30hz? If you were to see the 2khz 90dge phase shift graphically, couldnt you "zoom in" on it and it would look identical to the 30hz 90deg. phase shift?
