I have a couple granite series amps, the input sensitivity is rated 500mv-2.5volts. My question is will they work with my new excelon 5volt output deck? Are they rated at 2.5volts because thats all that was available at the time?

You should be fine. Your deck isn't going to do 5V anyway. Set the gain as normal. Expect it to be near min.
