Would my stock alt be able to handle the SAZ 2500 If I changed the big 3 with an extra battery?

More then likely not. I would suggest an upgraded alt and replace your battery up front and add an extra one. Electrical is one are you don't know want to cheap out on. This will cause issues later on.

You could also check out audioque for subs and amp. 2 HDC312s on a 2200 would do very well. $967 shipped. About the same price as Sundown

This is what I would consider in your price range

2 audioque HDC3 12s

1 audioque 2200D

1 Kinetik HC1400

1 Kinetik HC2400

Which is around $1600 shipped if all bought new(could save by buying used of course) With the SA12s and SAZ 2500 you would be in the same price range.
