You're missing the point of capacitors, it's not about total reserve capacity it's about discharge rate. Batteries can store a lot of power but they are quite slow to discharge it when demanded, caps can fill that gap if used appropriately.
Also as it's been said, the 'banks' of caps that people build are not the same thing as those crappy car audio capacitors they sell in the big box stores, they use actual industrial capacitors and by building a bank they can achieve a much greater capacitance.
