I need a pair of GOOD 8" subs with a 4 inch mounting depth. Do they exist?

Dunno why those Cadence's were recommended, but you're entirely correct in thinking you'd over power them, as a pair is only rated for 400W.
Wait, I would overload the Cadence subs, or the CDT subs someone just posted?

CDT = 200 RMS / 400 peak

Cadence = 500 rms / 1000 peak

The Cadence subs are the ones I'm worried about UNDER powering...

Sorry, the CDT subs would be screwed.

The Cadence subs that weenie is selling would be great as well if you could fit them. I've heard good feedback about em. And you never have to worry about under powering any speaker, because there's nothing wrong with that at all And that amp will be perfect, when wired at 1ohm. So you're going to want a pair of subwoofers with Dual 4ohm voice coils, or single 2ohm voice coils.

im telling u the rockfords are great for you man. not just trying to make a sale either, they are bnib! did u have a problem with rockford with brand new subs or were they used? these are nicely built and sound very clean.

They ONLY thing keeping me from buying them right now is the 4 ohm problem. Everything else about the sub is perfect. Even the carbon fiber basket would match the rest of the truck.

I'm going to ask a newb question here - Is it possible to take a sub that is built 4 ohm, and have it re-built to 2 ohm? I would imagine adding a second voice coil would be even more out of the question...

It is not worth the money to buy good working subs and have them "reconed" for a different voice coil config. You are much better off buying subs that has the ohm load that you are looking for.
