How many Ohm's do I need my mono amp to deliver at for 2 2-Ohm subs?

I'm buying two subs that are 500 watts RMS single coil and 2 Ohm's. I want to buy 1 amp is roughly 700-1000 watts to power them both. My question is how will I need to wire these 2 subs together with the amp and what impedance should I be looking for in amps? Since I will have 2 2-Ohm subs, do I need 1000 watts @ 4 ohm's coming from the amp, or just 1000 watts @ 2 ohm's?

Also, what are my different options for wiring this up?

you sure their 2 ohm single voice coil ?what make \ model are they?
The model I want to buy they actually make in 2 and 4 ohm's. I can get whichever is more practical, there's only like a 10 dollar difference. Just in case it matters, they are the 12 inch JL Audio W3's. They come in 2 and 4 ohm's and are supposed to be 500 RMS.

I was actually just thinking about the possibility of getting 2 of the 4-ohm version then hooking those up to a 2-ohm 1000 watt Rockford mono amp. Does that sound good?

 
IMO opinion JL and Fosgate are both over priced equipment that I won't any longer use since there is so much more out there
Would you mind just listing a couple amp brands and sub brands that you think are a better choice? You probably know a ton more than I do so maybe I shouldn't get this setup lol
