I'm confused about these ratings for sub woofers. I currently have an Alpine SWS-10D2. It has two 2 ohm voice coils. The specs say its rating is max 500RMS with 1500 peak.

Does this mean for each coil? If I wire the coils in parallel would the rating be max 1000rms be cause the power is split between the two coils? If the coils are in series then the rating would be only 500rms since the power flows thru each coil?

You can always get a bridgeable 4 channel, too, instead of a massive 2 channel.
