can i run 8 speakers on a 1100 watt 4 channel amp?

You can run as many speakers as you want to an amp as long as it's wired correctly for that amp.

The power is divided between the speakers.

IMO You'd be better off properly powering one speaker to its fullest than underpowering a few.
