If they are DVC 4 ohm, you can't run one @ 4 ohms. 2 or 8 are your only choice.

And at 2 ohms, there should be plenty of power for one of those subs.

Right again ;P.... so I'll run one of them at 2 ohms for now. The amp won't be too powerful for one of the subs on it's own? The amp is 500rms at 2ohm and the speakers are 300rms each...

Yes, they're the REF1242's which are the newer DVC. I'm not really ready to sell them as I'd like to hold onto them until I can score a good 1 ohm stable amp or until I pick up some subs that would be a better match with it. I'll keep you posted though if I do indeed decide to get rid of them, but shipping from T.O. to Sacremento would be some serious $$$.

Any recommendations on a proven enclosure for a single 12"?

As long as you are judicious with both the gain and the volume knob, there shouldn't be a problem with being too much power.
