ok, louisiana is the crawdad capital of the world. mississippi is closer to the capital, therefore it is better. im fvckin with ya. from my experience, they taste the same from baton rouge, to pensacola.

Well the supply is better in MS than in AL. But yes, if cooked correctly they should taste the same.

for 1 33lb bag

first step get your cooking liquid steeping.

about 4 gallons water with 4 packages of zatarans crab boil, a handfull of whole black peppercorns, handfull of bayleaves, 1/4lb of cayenne pepper, 1/4c old bay seasoning, 1 large bottle loisianna hot sauce, smoked hot paprika 1/4 c. 6ea leamons (halfed ) , 1 head of celery whole. 3 ea yellow onions, in cheese cloth put 4 fresh habenerro peppers 6 ea fresh jalapenos and 6 ea fresh serannos quartered. and 8ea whole cloves.

let the water steep. not boil for atleast 30 minutes. then add your potatoes and corn on the cob if you want.

while steeping water purge your crawfish. put them in a tub of salty water probably need 1/2 lb of salt for 1 bag of mud bugs.

after about 15-20 min the water should be cloudy with their poo poo and pee pee and vomit.

rinse well and soak another 10 min. at this time crank your fire up and get your water to boil

rinse crawfish again and put in your pot of boiling water. you can also add large silver dollar mushrooms with them and cut sausage if you desire

let the crawfish boil for 6 minutes then turn off fire and allow to soak for 6 more min

then pour crawfish potatoes corn ect into an ice chest and allow them to cool slightly.

on the stove melt down 3 lbs of whole butter and mix in another large bottle of loisianna hot sauce and pour over the crawfish once they are done cooking. dont season them at this point thats what fae ***** that dont know how to make crawfish taste good do.

now eat up

 
Try the crawfish etouffe at Popeye's. Spicy and delicious! It's about the only fast food place that does anything Cajun/Creole out there. The red beans and rice they serve are pretty good too.

shrimp are overrated and over used. a true cajun boils his crawdads with some tators, corn, mushrooms, garlic, onions, cellery, etc, and about a full tub of seasoning boiled to perfection.As stated before pinch them tails and **** da heads! all the flavor will be in the heads and mushrooms. If you know how to eat them there is no effort involved.

3 step procedure:

pull apart

**** head

pinch tail and **** meat out...move on to next one unless the claws are big enough to enjoy

pf changs is a fin joke. i worked there for 3 days in the kitcchen it was the dirtyest kitchen i have worked in and their food is bland crap. its only good if you pour tons of funky asian sauces on it .

go eat real chinese food and then you will pimp slap pf changs over priced crap food

thats a lot of shit. we use the gas burner with like a 30gal pot. get the water hot, add the crab boil and let it boil for a minute or so (while washing the crawfish with salt and water) then fill the basket with the crawfish, and little red potatoes and half ears of corn. drop the basket in for i think it is 5min (that may be for shrimp) and then pull the basket, let it drain and dump it on a table.

crack open a beer and get to it!

Well you should have cleaned that kitchen bish. You obviously have more experience serving food than I. I am more on the consumer side, but I appreciate what all you gals in the kitchen do for us.

true but the population decended from french and the 1800 was what 4 generations ago? not that long.

they had an overnight cleaning crew. we just wrapped the food and went home. and when you get to a job and its allready a sinking ship there is no use in trying to bail it out.
