Who here eats crawfish?!?

The funniest thing (in a sad way) is that Chinese crawfish are cheaper in Louisiana than the local product or at least they were in the late 1990's.

Good seafood is also a West Coast tradition. Dungeness crabs, our local prawns (absolutely huge due to limited harvesting), salmon, trout, clams, oysters and other species from our fisheries are all highly prized by locals and tourists. However I give the thumbs up to the good cooking in Louisiana for bringing the spice to the seafood!
