Where to ground off the amp?

Use a seat bolt. Just make sure you have GOOD metal to metal contact. Get a wire brush or something and get the pain off in that one small area. You don't need to do any more than what the terminal needs for it to contact, so you shouldn't have to scrape away so much that it would be noticed.

So just unscrew the bolt, put the screw through the fitting, then screw the bolt back in? With the fitting in between the screw and the seat?

 
What I would do is solder a ring terminal to my ground wire from my amp. Select a bolt that goes to the body of the car. IE, seat belt bolt, seat bolt. Pull back the carpet enough to get to metal. Clean off a spot. Put the ring terminal against the freshly cleaned spot, then put all back together making sure that the ring terminal is on the bolt when you put it in.

I hope that made sense.
