First off... Do you take (desired wattage) * (ohms) (sqr. root)

or- (desired wattage) (sqr. root) * (ohms)

??

if it is the second equation I wrote, then, here is my question.

Why is my voltage reading coming out so low? I am getting a MAX reading of 50v, but for 900w at 2ohm it should be at 62v... This is odd, b/c at 1ohm I was getting voltage readings way higher than I would expect..

 
yes,

watts X ohms load, then square root it!

also you need to have the subs or a resistor(with correct ohms load rating) connected or you are setting them incorrectly! if you set it up with no load to get your target voltage, then connect the subs it will be a higher voltage output from the amp.
