So, I picked up a 200a alternator and a yellow top batt. Did the big 3 in 0 awg. How many watts can I run w/o putting another batt. in the trunk?

depends on amp draw but Id recomend some batts for the back then you can run maybe 3000-4000

I have about 1300w on the stock 105a alt. and batt. and dont have any dimming.

If it helps, from my experience I have ran a Kicker ZX1500.1 with only an Optima red top and the big 3. I'm unsure of the alternator amperage, but it was a stock alternator on an '03 Maxima. No major voltage drops at all.
