Sundown amps are supposed to be quite nice but I haven't used them or heard alot about them... they were kinda new last time I was around, search the forum. As for subs I recommend either the TC-3000, LMS-4500 or a sound splinter RL-P. Also remember you need to get a sub that is dual 2ohm so you can wire it to 1 ohm (one will be find for any of those subs).
Also if you have a little too much power in the amp that is fine. You can just keep the gain knob low and you will be "underworking" the amp, making it run cooler and providing extra "headroom" so the amp isn't doing everything it can just to produce enough power ofr the sub. This is both good for the amp and the sub....
I'm not sure what the power rating is on those three subs but they can all handle between 1000 and 1500 watts.. but I'd shoot for around 1000 because once you start pushing above 1000w you are looking at new alternators and batteries etc (SUNdown 1500D with gains turned down)
