Opinions regarding my noob system

Not really. Just set the gains for around 350w per sub and you'll be good. It'll run cooler because you're not pushing the amp to it's limits. Plus it will leave your options open for upgrades in the future. As long as you set it up right to start with, you'll be fine.

 
I use to have 2 Memphis PR 12's on the older Memphis ST1000D and they had no problem taking that amp at 1ohm. But if you are really that concerned about them taking the power then just get the Single 4ohm coil's and wire it to 2ohms. Getting the PR1000 or any other good 1000D now will set you up to be able to upgrade to a bigger woofer in the future and use the full potential of the amp.

Threadjack!! Any chance you still have the ST1000D?

 
No, I sold that entire setup to a friend of mine about 2 years ago. One of my biggest regrets was selling that amp. He still has the same setup to this day still playing strong. I figured he would have burnt something up by now lol.
