Need Some Speaker Advice

So I'm looking to buy some component speakers and I'm looking at the Polk mm6501. Here are the ratings for them:

Overall Frequency Response 40-25kHz

Nominal Impedance 2.7 ohms

Power Handling (continuous) 125 w

Power Handling (peak) 250 w

Efficiency 94 dB

What worries me is the 2.7 ohm impedance, I want to run these using my current amp which is a Kicker zx350.4 bridged to 2 channels, here's the specs for the amp:

RMS Power Output (Watts x Channels) 60 x 4

Power at 2 Ohms (Watts x Channels) 90 x 4

Bridged Power (Watts x Channels) 175 x 2

Minimum Impedance Bridged 4

Minimum Impedance Unbridged 2

To run the speakers at full power I want to bridge the amp into 2 channels. So my question is would it be safe that way b/c the minimum bridged impedance is 4? If not should I look for a different speaker around the same rms rating with a higher impedance or should I just look for some speakers that would work for the 60 rms and run 4 speakers?

Second Question: Mounting

So my second problem is that I drive a 1994 Yukon and the stock location in the front are 4x6 dash speakers. Ideally what I would like to do is make something either out of mdf or fiberglass to mount the drivers somehow in the same area as the stock dash speakers and put the tweets on the pillars. Original mount has speaker depth of 2.5" and mounting depth on the momo's are 2-5/8". Here is a picture of the area if it helps:

If that doesn't work 2nd option would be mounting the driver somewhere in the door and running the tweeters from the pillar still. My question here would be would it work with the tweeter that far away from the mid and where would be the ideal place to mount the driver.

My third option would be making a kick panel b/c I don't really have the money to buy kick panels but I'm also very new to fiberglassing so I'd rather do one of the other 2 options preferably. I'm not too worried about aesthetics and the drivers being mounted flush I just want them to work and be in a safe place. Thank you in advance for any help
