OP needs to measure precisely how much volume of box he can fit and plan from there. That prefab box was 5 cube for the cone area of a pair of 18's!!! That box isn't adequate size for one L7 ..... And unless you're getting Kicker at dealer cost or used they're not worth what you'll pay.

I was going to take the seats out but I want to keep them in if I ever need to bring family/friends somewhere. In that case I would temporarily take the subs out
Op If you want want bass and have seats for your family and such, i would recommend a center console build. Similar to this
. 4 12s would have more cone area than 2 15s. It will completely destroy the 4 8s setup with an extra 10 or 12 that your wanting to do as far as output and sound quality that is if you dont mind a huge wedge between the passengers. Its gonna be an expensive enclosure though. Doesnt need to be leathered up like in the video unless you want it like that, but it'll require some fiberglass work and paint to make it look real nice.
Another option is that you can still fit 3 12s and keep the rear center seat and it will still have around 95% as much cone area as 2 15s.
Either way, you need to give subs the amount of airspace for them to breathe. For example if you buy that ground shaker box for those L7s 15s, you'll be choking those subs and they will suffocate in that box. Bass will be weak, Sound quality is non-existent.
it would be better to find a professional fabricator/box builder do it locally, since you'd have to build it inside your truck if your going to put more than two subs.
