i was wondering the same can i just do the big 3 as an add-on and not remove stock wiring

Yes a lot of people actually prefer doing it that way so they dont fubar up any of the factory connections

I only removed the main negative runs on block to chassis and bat to chassis because they clearly didn't go to any other device or sensor. But I kept all factory runs that went where I couldn't see and just added my own 0g by a shorter path.

Yes you can, its easier that way. In my truck i decided to remove stock power and ground and upgrade them to all 4awg or bigger just to look cleaner.

Having more that the 3 grounds connections wont hurt you in any way that i know of.
