So I've almost finished buying the gear for my Escort, and now I have to figure out how to install it all. I've acquired some Focal 165V1 comps which I'm going to use for rears, and to avoid cutting up the rear parcel shelf I'm thinking some custom enclosures are in order.

What I'm not so sure about is what kind of specs I should be building the boxes to. Basically I need to know what volume they need to be and whether or not they should be sealed or ported. Any help would be much appreciated.

Yeah, if you want them used as they were meant to be, as large as you can go will give you the best free-air equivalent.

If you want them to be more bass/mid heavy you can put them in a small kick-pod sized cube of like 0.2cu ft.
