Center frequency?

Having some trouble understanding what this means? I have a Excelon head unit that can adjust center frequency but not sure how this affects my sound? I would prefer just to set the stereo up to play the track just as it was recorded without any boost or cutting of frequency's. If I don't adjust the gain on bass or treble will it not matter what I have center channel frequency set at? Does the center frequency mean if I boost or cut frequency's these will be where the boost will mostly be?
