Antenna Adapter and Dash Kit?

So I have a 1996 Pontiac Grand am with a Din and a half (So out dated) I recently purchased a JL W3 12', a ported box, a kenwood KCD 255U, a Rocksford r500x1, and I think there are a couple things I still need. My install guy told me that he didn't need the wiring harness and that the antenna adapter was optional. If I wanted an antenna adapter, would any GM adapter work? Why would I want one? If I were to get a dash kit, are they all standard size? Would a single din dash kit fit with the single den head unit (I don't think so, that sounds like a double din).. If not, is a half din equalizer a better option or is all of that taken care of on the Rocksford Amp? Could I get a dash kit with cup holders? Do I have any other options?

This is a red flag. Please find a new "install guy". The wiring harness is not an option, its a requirement to intalling a deck.

 
He said "I don't need it because I know the colors of each of the wires and what they go to." Is there any legitimacy behind this argument...? I don't have as much knowledge about this stuff as I'd like to..
