Tonight I present my homemade mac and cheese.

The software: 1lb medium shell pasta, 1 lb fresh cut applewood smoked bacon, saltine crackers, and of course 4lb of freshly grated cheese (sharp cheddar, colby, smoked gouda, muenster, havarti, and parmesan). Not in the picture are the butter, flour, and milk for the cheese sauce base.

Ready to pop in the oven

Smoked gouda is actually one of my two favorite cheeses. Second of the two is Tomme de Chevre (which makes a hell of a mac and cheese), but that's pretty expensive and kind of hard to find.

My brother makes some fire *** food sometimes, he has food logs on GenMay, (The forum). He doesn't do it much anymore, but he makes this sauce that has garlic and a bunch of other herbs, and he soaks shrimp in them and let them marinate for a few hours, then he barbeques them, and they're SO AMAZING. I'll get some of his logs and post them up.

I'm thinking of putting a cookbook together this summer. I love to cook and have a few really nice signature recipes. Lots of experimenting, which means lots of these threads to come.

I kind of got distracted because I forgot my roomate was bringing home our new couches and our new kitchen island tonight. About 10 minutes after the mac came out, he pulled up. We then spent a good amount of time rearranging the living room and kitchen to accomadate the new furniture. After we got done with that, neither of us wanted to do anything but flop down, eat, and watch a movie.

But here are the pics of the cheesy goodness.

However, I couldn't make it for shit.

That I highly doubt. I have yet to meet a better cook than me who wasn't professionally trained. Granted, there are a bunch of memories and emotional responses that come from eating "mom's mac and cheese" or other classic comfort foods like that, but for sheer taste, I would put this up against any mac and cheese out there, and I've eaten a lot of mac and cheese in my day.
