Trying to set my gains with a DMM.

I unplugged the subs, turned all eq and bass boost and whatnot settings down, set the DMM to 200 DCV and played several test tones from 40-49hz to 50-59hz to 60-69hz to even 30-39hz and probed the positive and negatives of the amp with the positive and negatives of the DMM and the result? Absolutely no reading on the DMM...

What am I doing wrong?

You need to use AC, not DC on the speaker outputs of your amp.

Switch to AC. Power from an amp to speaker is no longer DC; it is AC. This is what you're testing for.
