Sundown sa 8 v3 and x8? Any difference between these 2?

They are very different subs.

Most obviously... the X-8 is 750-watts RMS and the SA-8 v.3 is 500-watts RMS.

The X-8 uses a 2.5" coil and the SA-8 v.3 uses a 2" coil... and thus totally different spiders and cones. The surrounds are also shaped differently with the SA-8 v.3 being more linear like a "mini" Mega-Roll and the X-8 surround being shaped more for SPL.

The SA-8 v.3 is our lowest distortion ported box eight -- the X-8 is our highest output ported box eight.

Is the x8 a low end monster like the rest of the x series or does it play well all around?

In our line all of the 8s are unique to their line.

The X-8 is more of a "traditional" sounding subwoofer -- not an ultra high-excursion, linear, bottom-end monster like the rest of the X series.

Granted it can still play low but it's not going to sound like the rest of the X line.
