Just flush mount the sub and a few washers under the grille and you should be fine

Try getting some body kit grill mesh. Also, I am no expert here, but couldn't you recess the sub enough to allow full excursion and a little extra then run this mesh over the entire side of the console. Then when you wrap it just don't wrap the mesh over the sub. Would be totally custom looking and safe.
