im going to be getting 4 PSI-8's 600 watts rms, 2 ohms each and i was going to use a Rockford Fosgate prime r750.1 monoblock amp... is that the right size amp?
They're dual 2 ohm vc's, 4 can be brought to a 1 ohm load. If they're the 600w rms versions you'll want 2400 watts (600x4). Can probably get away with a true 2000 watt rms amp.

Manufacturer calls for 600 watts for each one, you indicated you will have four. It's incorrect to say it won't work but your total sub(s) output potential won't be reached. Could just use one of those 8's with that amp.
You can play 4 of those subwoofers on that amplifier, but it doesn't quite make sense. One subwoofer in an enclosure optimized for your goals would likely be more impressive sounding.
