Quick Question About Setting Gains With Two Amps

I know how to set gains. I've got test tones and an oscilloscope.

I've got two amps (a 4ch and a mono) and two questions:

1. If I'm setting the gain on one amp I usually just pull the RCA cables from the other. Should I instead disconnect the power? Does it matter?

2. I disconnect the speakers from the amp before doing any of this. Can I just remove the one wire from the box, breaking the circuit, instead of removing everything at the amp? It just takes longer to undo everything at the amp with the ring terminals.
