Pop occurring as I turn ignition key off

Okay, the two amps (and a cap) are all grounded via a ground distrobution block using 4 ga. wire. From the ground block, 1/0 is grounded to a very sanded (bare metal) point near the wheel well (power wire going back to the power distro block is also 1/0).

 
Not sure if this will work as I have yet to finish the install in my car. I had a similar situation where I was getting a turn-on/off pop as well whenever I was accessing any of my head unit menus. It was recommended to me that I run a wire from my ground in the trunk for my amps to the front of my car so that I can ground my head unit to it. That way all the electronics are grounded to the same point hopefully preventing a ground loop. I also ran a ground for my amp directly to the battery, mind you I just ran it outside the car and into the trunk just as a test and that eliminated the noise as well. Good luck!

I am not trying to imply that you infact have a ground loop but it does sound like you have some kind of grounding issue. This is a potential solution it should not take much to connect a 12/14 guage wire to your ground distro block in the trunk and run it to the head unit, no need to hide the wires or anything.
