So if I purchased a set of 6.5's (rainbow, or focals..) would the 300.2 power them?

(I basically need help figuring out speaker/amp setup, I've been using stock)

Absolutely as they put out a clean solid 75 watts per channel. I have the same amp powering my KEF front speakers in my Mustang and it does an excellent job. If you don't think the 300.2 will do the job the 500.2 definitely will and just $25.00 more as it puts out a clean 125 watts per channel. Either amp would be a perfect match for your fronts and a perfect mate for the 1200.1

If you need any high quality RCA's let me know, I have a whole shit ton I could use as leverage for trade, and possibly my old school RF 225.2 as well.
