I only have 2" of mounting depth and the speakers I want are 2.95"s

I found 1" speaker spacers but I am concerned since the clearance would be so tight. Can I use a speaker adapter together with a spacer so it will provide plenty of extra clearance. Get some MDF and make a spacer.. Just cover it in some deadner to keep some water out

Like i told you funand games earlier, I really think mdf is your best option.

You can cut a little sheet metal out in the mid-plane of the door (in front of the window). I have Pontiac Sunfire and installed ADS 6.5" comps and removed about 1 sq ft of sheet metal then sound-proofed inside of door. Wasn't that bad to cut with jigsaw.

Make sure your baffle is large enough to let enough airflow through. And don't forget weatherstripping foam or non-hardening modeling clay.
