As of now I have a directed 750d amp that gives

Rated Power @ 4 ohm: 275 x 1

Rated Power @ 2 ohm: 400 x 1

Rated Power @ 1 ohm: 600 x 1

and I have two directed studio subs that are dual 4 ohm voice coils that can handle 400 watts RMS/600 peak.

I am picking up a directed 1100d today that has a total of 1400 watts and gives

Rated Power @ 4 ohm: 425 x 1

Rated Power @ 2 ohm: 800 x 1

Rated Power @ 1 ohm: 1100 x 1

Would it even be worth bridging the amps? Or should I just use the 1100d and the subs will be close to full power?

Huh? Just wire the subs in parallel-parallel for a final 1ohm load and run them on the 1100d. That'd give 550w to each sub, which is probably a little more than they need considering RMS is only 400w. Just use your head when setting the gain, and set it conservatively if needed.
