The gain knob is not for twisting it all the way to the right to get the most out of your amp. It is for matching the output voltage of your headunit (and/or anything else before the amp). Turning it all the way up will not make your system any louder than if you had it set properly. It will increase the chance of you hurting/smoking something with the volume cranked.

If you are gung-ho about extracting the most out of your system and not so concerned about limiting risk of damage, which it sounds like you aren't - just set your gains with a -10dB tone and a DMM. It will get you where you want to be - Loud and using all of your amp power while still limiting to a degree how much you clip the signal.

To answer your question you should be fine with around 800 watts.
