Currently have CDT es62i's with a kicker kx650.4 amp.

My current MDF 6.5 spacers are damaged from water.

Do I replace those old ones with something like this:

1 Pair of 6 5" MDF Speaker Mounting Spacer Recessed Fiberglassing Rings | eBay

or like this made for my car?

Which will provide better acoustics with a dampened door & maybe some foam around the speaker?

If i had it to do over again id do option 1 but coat them in something to protect them. A lot of people are taking the plastic cutting boards from walmart and cutting them to make baffles.
