Home early from work. Slow Sunday. So I am experimenting with supper.
2 tall cans condensed cream of mushroom soup
1/2 tall can milk
1/3 cup extra virgin olive oil
1 palm full of each:
Parsley
Basil
Garlic Powder
1tbls crushed red peppers
2tbls fresh ground black pepper
2tbls everglades seasoning
Several quartered little yellow potatoes
Several quartered little red potatoes
1lb Sliced Smoked Kielbasa
8oz Diced Pancetta (Pan-Chet-Uh)
Slow cooking for SEVERAL hours.

It's coming right along. I added the diced pancetta which is a salt cured pork belly thing and taste test so far have it just the right amount of salty. 1 more hour!!!I would think diced chicken breast would be a better match. I would serve it in a bowl topped with grated sharp cheddar cheese and sruspy cooked bacon bits. Reminds me of chicken corn chowder, minus the corn. Looks good!

I cook quite a bit. I know what pancetta is, but I understand why you explained what it is, Especially, in here. I'm curious what Everglades seasoning is? That, I've never heard of. Is it a creole seasoning?
