can i wire just 1 coil on my sub?

not a clue, i think you can but you need to wire it specially, you should be able to find a correct wiring sceme at the team rockford site. Caraudio.com also has the scematics somewhere (search)

 
If you use only 1 coil you can only put 1/2 as much power into the sub. You also risk voiding the warantee, since almost all mfgr's say don't do it.

You can always wire the coils in series... that'll also cut the power in half but it's perfectly safe. And some amps will run 2 ohms even tho they don't spec it.

 
ok, the problem is this: i have a PPI amp that is 75W per channel, and is bridgeable for 300W at 4 ohms. my sub is an eDK12 double 4 ohm coils, so how can i get the most out of my amp? if i wire both bobins in series, i´ll get 8 ohms, and in parallel 2 ohms. how do i feed 4 ohms to my bridged amp?

you cant wire it to 4ohms, the only way u can wire it is to 8 and 2ohms but ur amp is only 4ohm stable bridged u can only run the sub at 8ohms, so u have to get a diff amp if u wanna run it at 2ohms
