can i use just 1 voice coil on a DVC?

well i ask because its actually louder now just wiring up one voice coil. ive tried it in series and parallel and both of them werent as loud as this was when i wired just this one up

When you just use one coil it changes the T/S parameters of the sub, this could make it peak higher in certain enclosure configs (the louder you're hearing), yes it reduces powerhandling a bit, no it won't damage the sub.

Chances are the difference you are hearing is because of the shift in T/S parameters due to only powering one coil. This is changing the response characteristics of the subwoofer and how it reacts in a given enclosure.

Remember as was mentioned; Power handling is reduced. But as long as this is properly observed there is nothing damaging about it.

Generally it's recommended not to power a single coil because of the shift in T/S parameters, which many people don't take into consideration.
