Auto Wire Strippers

#1 will strip wires in the middle, without cutting. #2 will only strip the ends.
The best wire strippers I have ever used are Kronus from Radio Shack. They look like the ones in Snova's post but heavier duty. I've used them over and over again every day for over 3 years now with no problems.

Be sure they are metal. The plastic ones work ok for most jobs, but not all.

0 gauge sheathing's already so thick, tho

it's too much fun diggin in to it with some scissors or a knife

I have a set like #2 and they work well on larger gauge wires (12-8 gauge).
I'd recommend a set like these however:

I haven't gone a day at work without using my set of automatic stippers like the ones pictured above...they are the shit.

Ditto those are what I use at work. We probably have 6sets of them. Great for remote starts/alarms.
