Hey I have been looking into buying the Eclipse XA1000, but I was wondering, should i get a two channel amp or stick with getting the mono? It will be used to power 2 12" 4ohm SVC subs.

Also could someone explain why one is better than the other?

go with the mono

class d amps are more efficient, but they do not cover as wide of a spectrum of sound as class a/b amps

that is why more often than not class d amps are used for substages and class a/b amps are used for mids and highs

I think...

Agreed. The sound from class D amps is not as good as that from class A/B but not by a wide margin. Class A/B amps produce a more musical sound for lows which is why some people who are s/q oriented go with class A/B. The problem is like posted earlier is class D is way more efficient and does not heat up nearly as quickly as the class A/B amps.
